Default Can someone led me through the wine making step?

I've never made wine but I would like to make my own wine for my wedding next year. I have a lot of nanking cherries to contribute to the recipe... any suggestions?

If the wedding is next year, there is no way a decent wine will be ready to serve. You will need at least 2 years for the best possible results.

If you have lots of nanking cherries you could make a cherry wine, but you will need to add a fair amount of sugar or honey to help the yeast along. Your best bet is to buy a decent wine recipe book and follow the directions for their recipe. Once you have a few batches under your belt, you can improvise. Good luck.

looks like I am first up. Congratulations.

First you can get a book from a local book store. Better a local home beer and wine shop will have books, ingredients, and advise-experience.

First you need your ingredients: wine grapes or fruit (cherries), malic or acetic and/or sulfur based acids, sugar, and yeast.

This is very basic as a assume that you Will get a book (you will be better off).

!, Press the fruit. You will need a press either before or after fermentation. So either crush the fruit and add the yeast now and press later or press to get juice now and ferment it.

2. Add sulfur dioxide which will the bad bacteria and undesirable yeasts & molds.

3. Ferment

4. Rack (transfer) to seconady vessel forfurther settling. Perhaps age in oak or vessel w/ oak chips.

5. Filter & bottle.

It is work but generally fun work. Have some wine while making your own. Time will vary but figure it will just be ready in time for your wedding next year if you make it soon.

I just seen Chris's notes. He is correct if you make a grape based wine or if you want an aged wine. But for your purposes you should be fine with making it now. (you are not selling commercially-right?)
